Rich Chocolate Shot Glass Puddings


I've just made these puddings in advance for my Christmas Day guests. They are rich, raw, nutritious, decadent, dairy and refined sugar free.

They are so quick and easy to make and will keep in the fridge for a few days too!

You will need:

1 large ripe banana

1 ripe avocado

8 pitted dates

2 tablespoons almond butter

2 heaped tablespoons raw cacao powder

Drizzle of maple syrup

Raw cacao nibs, shredded coconut, and edible glitter to decorate

Method:

Place all of the ingredients in a blender and blend really well. You will have to stop / start frequently to scrape around the edges. Add a drizzle of water too. Taste the mixture to see if you want to add more maple syrup. Also check the consistency to make sure it's really smooth, otherwise keep blending.

Once the mixture is blended together really well to a smooth consistency, divide the mixture equally between six shot glasses. Sprinkle with cacao nibs, shredded coconut and edible glitter to decorate.

You can serve immediately, but I find they are best when they have been chilled for a few hours.
