Oat & Date Cookies


I made these cookies recently for one of my workshops and they were a hit! Make them yourself to find out why.

You will need:

190g oats

50g brown rice flour or buckwheat flour

90g pitted dates

60ml almond milk

60g coconut sugar

25ml maple syrup

45g coconut oil melted (and extra for greasing)

1tsp baking powder

pinch of sea salt

Method:

Pre-heat the oven to 180 degrees and grease two baking sheets with the coconut oil.

Blitz the oats and dates in a blender to form a flour. You can have the oats as fine or as chunky as you like.

Pour into bowl and add the flour, baking powder, sea salt and then all the wet ingredients and combine well. You may need to start using your hands at this point. Once a sticky, cookie style mix has formed scoop the mixture into a tablespoon and then roll into a ball with your hands and then squash using the back of the spoon once it's on the baking sheet to make a cookie. This should make about 12-16 cookies.

Once done, place in the oven for 10-15 minutes, keep an eye on them. They will still be soft when you take them out of the oven, but carefully place on a cooling rack to cool - or eat warm - which is definitely my preferred choice!
