Garlic and Smoked Paprika Baked Beans

These are a lovely happy and healthy alternative to a tin of baked beans. I counted 11 ingredients on a tin of baked beans recently; this recipe uses nearly half of that including no refined sugar! And they taste even better too, in my opinion.

Serves two.

You will need:

1 tin of haricot beans, drained and rinsed

1 tin of chopped tomatoes

2 tablespoons of tomato puree

2 cloves of garlic, peeled and crushed

1-2 tablespoons of smoked paprika (or more)

Salt and Pepper

Method:

Empty the tinned tomatoes and crushed garlic into a saucepan and bring to the boil. Gently simmer for about 10 minutes, stirring frequently. If you have quite a lot of lumpy tomatoes, you can use a masher throughout cooking to squash them down to create a nice sauce.

After 10 minutes, add the haricot beans, smoked paprika, salt and pepper and tomato puree. At this point check the taste, texture and consistency. I love smoked paprika so I usually add more. If you want the sauce thick, add more tomato puree or you may like a runnier sauce in which case you can add a tablespoon of water later on.

Simmer gently for a further 10 minutes, stirring frequently.

Serve with your favourite meal and enjoy!

***Top Tip*** I use this recipe for all sorts of beans, whatever is in the cupboard including chickpeas, black eyed beans and kala chana. Why not add chillies and other herbs and spices too? Get creative and use your taste buds :-)
