Almond and Cashew Gingerbread

You have to try these cookies! I made these with mum and we have not stopped eating them since they came out of the oven! Also they're healthy and really good for me yum yum.

You will need:

100g almonds

130g cashews

180g brown rice flour

1 large egg, beaten

100ml honey

2 tablespoons ground ginger

1 tablespoon coconut oil (plus extra for greasing)

1 tablespoon chia seeds

Method:

Pre-heat the oven to 180 degrees centigrade.

First put the nuts in the blender and whiz up to a fine powder wwwwiiiiiiizzzzzzzz!!!

Then pour the nut powder into a large bowl.

Next add all the other ingredients plus 95ml of water - don't forget to stir well!

Now get your hands messy and form a dough.

You now need to flour the surface with extra brown rice flour and begin to roll out.

The dough can sometimes be a little bit crumbly, so work slowly and carefully.

Start to cut out the shapes and place onto trays greased with coconut oil.

Finally place the trays into the oven for approx 10 mins - don't forget your oven gloves!

Feel free to eat 10 at a time!!!!!!!!!!!!
