Honey and Banana Bread


This is a lovely gluten free banana bread which is also free from refined sugar as honey has been used as a sweetener.

It's perfect as a snack or even for breakfast with a cup of tea.

It contains brown rice flour (naturally gluten free), so those wonderful complex carbohydrates I keep going on about as well as nutrient rich flaxseed which contains dietary fibre, omega 3 and vitamins B1.

Perfect for the kids too, my little boy loved this yesterday. Remember under 1s are advised to not have honey so please bear that in mind.

Makes 1 loaf

You will need:

3 medium very ripe bananas

30g butter (or dairy free alternative)

3 tablespoons honey

30g ground flaxseed (plus extra whole flaxseed for sprinkling on top)

1 teaspoon of ground cinnamon

220g brown rice flour

1 teaspoon of vanilla extract

3 medium eggs

Half teaspoon bicarbonate of soda

Zest and juice of a lemon

Coconut oil for greasing

Method:

Pre-heat the oven to 170 degrees centigrade. Grease and line a loaf tin with coconut oil and baking parchment. Leave enough either side to wrap the bread up half way through baking.

Mash the bananas and butter in a mixing bowl until smooth. Add the honey, cinnamon, vanilla extract, eggs, bicarbonate of soda, lemon zest and juice and mix well either by hand or use an electric whisk.

Add the brown rice flour and ground flaxseed and mix well again.

Pour the mixture into the loaf tin and sprinkle with the whole flax seed.

Place into the middle shelf of the oven and bake for about an hour. If after 30 minutes or so the top is starting to brown really well and go crispy, just wrap the remaining parchment around the top and continue baking for the remaining time.

When you stick a wooden skewer into the centre and it comes out dry, that's when its done.

Leave to cool before serving.

You can slice this cake up and freeze into individual portions which is great for snacks and breakfast and will also stop you eating it all in one go since it is so delicious :-)

***Top Tip - Grind your own flaxseed in a blender or coffee grinder, it's often cheaper than buying ready ground flaxseed***
