Raw Cacao & Peanut Butter Buckwheat Pops


This is a healthy and nutritional twist on the traditional rice crispy cakes. Buckwheat is full of plant protein, fibre, vitamins and minerals and is naturally gluten free. This recipe uses puffed buckwheat which you can buy online and from most health food shops.

If you have a chocolate craving, these are perfect for you and of course like all my recipes they are free from any refined sugar.

Makes about 24.

You will need:

80g raw cacao powder

65g puffed buckwheat

6 tablespoons maple syrup

3 tablespoons peanut butter (100% pure)

5 tablespoons coconut oil

Cupcake cases

Method:

Place the cacao powder, maple syrup, coconut oil and peanut butter into a saucepan and melt over a low heat until the mixture turns gooey and sticky, stir well.

Pour the mixture into a mixing bowl containing the puffed buckwheat and stir well so that the buckwheat puffs are completed coated and sticky.

Spoon the mixture into the cupcake cases and refrigerate for 20 minutes. You can then remove from the fridge and store in an airtight container.
