These are delicious served warm for a pudding or just cool as a snack. They freeze well too, so just pop them into individual bags and take one out when you want a yummy treat.
As always they are refined sugar free.
This recipe makes about 12 squares.
You will need:
125g raw cacao butter
100ml milk (any kind)
175g honey
2 tablespoons maple syrup
1 teaspoon vanilla extract
50g raw cacao powder
3 eggs
150g wholemeal spelt flour
1 teaspoon baking powder
Coconut oil for greasing
Method:
Pre-heat the oven to 190 degrees centigrade. Grease and line a 20cm x 25cm tin, leaving plenty of paper around the edges so you can lift the brownies out straight after cooking.
Put the cacao butter, milk, honey and maple syrup into a pan and begin to melt over a very low heat. When the mixture begins to melt, add the cacao powder and the vanilla extract.
Once the mixture has completely melted, beat in the eggs.
Pour the flour and baking powder into a mixing bowl and gradually stir in the chocolate mixture, stirring well.
Carefully pour the mixture into the prepared tin and bake in the oven for about 15 minutes. Once cooked, remove from the tin immediately and cut into squares. Allow to cool on a rack or enjoy warm.
***Top Tip*** Add chopped nuts for extra crunch!
