I had a small amount of raw cacao butter left, not really enough to make a decent amount of chocolate with, so thought I’d have a go at making a healthy sweet treat. Chocolate covered brazil nuts have always been a favourite of mine, so I just knew this was going to be amazing. Guilt free, refined sugar free.
You will need:
Small wedge of raw cacao butter (about 30g)
3 tablespoons raw cacao powder
3 tablespoons maple syrup
Large handful of nuts – I’ve used brazils and pecans
Method:
Melt the cacao butter in pan over a very low heat. Once melted, add the cacao powder and maple syrup. Stir well.
Once the cacao mix is smooth and nicely combined, stir in the nuts and coat well.
Spoon the nuts into a container or tray so they are evenly spaced out and place in the bottom of your fridge to set.
Once they are set and you're ready to eat them, use a spoon or spatula to lift them out of the container and remember to enjoy the yummy chocolatey scrapings from the bottom of the container too!
