This granola is nutritious and delicious and served with Greek, natural or soya yogurt with fresh fruit is your perfect start to the day!
You will need:
100g pecans
180g almonds
230g oats
175g pumpkin seeds
175g sunflower seeds
100g linseed
60g buckwheat pops
100g raisins, sultanas or any other chopped dried fuit
3 tablespoons maple syrup or honey
3 tablespoons coconut oil
3 teaspoons ground cinnamon
Method:
Pre-heat the oven to 180 degree centigrade.
Place the nuts in a blender, and whiz for 30 seconds, no longer - you want them roughly chopped. Then add them to a large mixing bowl containing all the of the dry ingredients, except the raisins and cinnamon.
Melt the oil and syrup or honey and cinnamon over a low heat until dissolved. Then add to the bowl of dry ingredients and stir really well, coating the mixture with the liquid.
Next, pour the sticky sweet coated mixture into a large baking tray and place into the oven for about 30 minutes. You will need to stir the mixture every 10 minutes or so throughout cooking.
After 30 minutes, remove from the oven and allow to cool completely.
Once cooled, add the dried fruit and buckwheat pops and stir thoroughly.
Store in an airtight container. It will keep for about a month.
Enjoy!
