Chickpea and Cashew Nut Burgers

I have to admit, the thought of a mushy vegetarian burger in a bun hasn't ever appealed to me. But these are delicious, crunchy and definitely not mushy. Give them a try! They're so quick, cheap and easy to make.

You will need:

Handful of fresh coriander

2 Cloves of garlic, crushed

Juice of 1 lemon

1 tablespoon honey

1 egg

1 teaspoon ground cumin

1 teaspoon ground smoked paprika

1 tablespoon cashew nut butter

400g tin chickpeas, drained and rinsed

100g cashew nuts

A dusting of flour e.g. chickpea flour

Salt and Pepper

Method:

Pre-heat the oven to 200 degrees centigrade.

Line a baking tray with grease-proof paper.

Add all the ingredients to a blender and and mix well. You still want the mixture to remain chunky and not go too smooth like hummus.

Divide the mixture up equally (this recipe makes about three burgers) and roll into balls and then squash into burger shapes using your hands.

Place them on the baking tray and then leave them in the fridge for 30 minutes or longer if cooking later.

When you are ready to cook them, remove from the fridge and dust with the flour, before placing in the oven for around 30-40 minutes.

When they are brown and crispy, remove from the oven.

Serve in a wholemeal bun or flatbread with salad and enjoy!
