Chocolate & Coconut Truffles


I can't quite believe how delicious these are! Give them a try. Don't be put off if you don't like any of the ingredients. When they are combined they create a decadent sweet treat which is nutritious and tasty.

You will need:

15 dates, pitted

45g raw unsalted almonds

15g unsweetened desiccated coconut (plus extra for sprinkling)

1 and a half tbsp almond butter

2 tbsp coconut oil

For the chocolate coating:

5 tbsp coconut oil

4 tbsp raw cacao powder

1tbsp maple syrup

Half tsp vanilla extract

Method:

First clear a space in the freezer where you can rest a tray. Line a tray with parchment paper and set aside.

Place all the ingredients for the truffles in a blender and blend well until a sticky dough / paste forms. You will need to stop / start and scrape around the edges. If the mixture feels a little dry and difficult to combine, add a little more coconut oil.

Shape the mixture into balls. Approximately one heaped teaspoon per ball. Press firmly together and make about 10 balls. Place each ball on the lined tray and place in the freezer for 10 minutes.

Meanwhile, combine all the ingredients for the chocolate coating in a saucepan over a low heat and stir and combine until melted. Remove the balls from the freezer and using a toothpick coat each ball in the chocolate and place back on the tray and into the freezer for a further 10 minutes.

Remove the balls from the freezer and give them a second coating of chocolate and a sprinkling of coconut and place back in the freezer for a further 10 minutes.

The balls can then be removed from the freezer and stored in the fridge in an airtight container for about a week. Just take one out when you fancy!
