Quinoa, Avocado and Cress Sushi

I had an idea to make quinoa sushi rather than using white sushi rice. Quinoa is rich in nutrients and a complete protein source. I'm really pleased with the result, and they taste amazing! It's really easy to make, even if you've never made sushi before.
Serves 1
You will need:
60g quinoa
1 sheet of sushi nori
Tamari
Tablespoon of sesame seeds
Half an avocado
Cress
Salt
Bamboo rolling mat
Method:
First cook the quinoa. Pour into a pan with a pinch of salt. Cover with boiling water so it's about an 1-2 inches deep. Bring to the boil and then simmer gently for approx. 10 minutes - keep an eye on it. All the water should absorb, but don't allow it to dry out completely either. Once cooked, set aside to cool.
Once cooled, stir in a large amount of tamari - taste test to see if it needs more! Then stir in the sesame seeds.
Spoon onto the sushi nori and push down. Go close to the edges but leave a centimetre gap at the far end.
Leaving a few centimetres gap at the front end, start to arrange the cress and avocado.
Now begin to roll carefully using the bamboo mat. Seal the end by rubbing a little water with your finger tip along the free edge.
Cut the roll into slices and serve with a tamari dip.
