Green and Lean Creamy Vegan Noodles

If you're a full-time or part-time vegan, then this dish is a great. Hot or cold and if you eat meat then add lean chicken or turkey. I didn't measure out the quantities on the veg, so just go with what you like more or less of!

Serves 1

You will need:

For the sauce:

1 Avocado

Large handful of spinach

4 tablespoons coconut milk

1 tablespoon olive oil

Drizzle of Lemon Juice

Salt and Pepper

For the noodles and Vegetables:

1 nest brown rice noodles or whole-wheat noodles

Handful chestnut mushrooms

Handful rocket

Fine green beans, sliced

Half red onion sliced

Handful bean sprouts

Teaspoon dried oregano

Teaspoon dried thyme

Salt and pepper

Olive oil for frying

Method:

Boil the noodles following the packet instructions.

Whiz all the sauce ingredients up in a blender - easy!

Now stir-fry the veg in a little oil starting with the onions, green beans, mushrooms, bean sprouts. Add the dried herbs and salt and pepper. They only take about 10 minutes, you want them nice and crunchy. Towards the end of cooking stir in the rocket.

Once the noodles are cooked, drain and stir in the sauce, then combine the veg mix and noodles and serve!
